A traditional pie dedicated to Saint Fanourios

Total preparation time 15 minutes, plus baking time

Quantity this recipe will make about 24 squares

List of Ingredients

Preparation Instructions

* 3 cups flour
* 1 cup sugar
* � cup olive oil
* � cup orange juice
* � cup brandy
* � cup raisins (or crushed walnuts)
* 1 tsp. cinnamon
* 1 tsp. clove powder
* backing powder



Mix all the ingredients in a mixer.

Grease a pan with olive oil and spread on it a little sugar and flour.

Pour the mixture into the greased pan.

Bake in medium oven for about an hour.

According to custom, the ingredients should be either 7 or 9.

Women in Skopelos make this pie once a year, on the eve of Saint Fanourios name day, every 26th of August. They bring their pies to the church of Saint Fanourios, where the priest blesses them with a nice ceremony. After the Mass, the pies are cut and everybody is welcome to taste them.

A cake is made and taken to the priest or given to someone when St. Fanourios finds someone or something for you.

Hmmm - that looks OK for Feasts [and weekends :p ] during Fasting periods looking at the olive oil and brandy biggrin

Rose is not at fault for the chocolate. I accept full responsibility for all my "sins" related to chocolate. biggrin Does anyone know about this saint? I am not familiar with him. BTW, I don't have any brandy at the moment, so I am going to substitute wine and see what happens.

Anehylea I think a tsp.

Here is another recipe without the brandy, uses wine...help save Charles here biggrin plus it is away from the olive oil.

1 cup �white� oil - soy or corn oil works well 1 cup white sweet wine
1 cup sugar
1 tbs. grated lemon peel
1 cup fresh orange juice
1 tbs. grated orange peel
1 tbs. baking powder
1 cup raisins tossed in flour, optional
3 cups flour sesame seeds


Oil and flour a baking pan of your choice. The usual is a sheet cake pan but I use a bundt pan instead and after I have oiled it well, I sprinkle the sesame seeds onto the oil instead of using flour - it makes a beautiful cake when it�s turned out of the pan.

Add all the ingredients into a large mixer bowl and beat well. Pour into your pan and sprinkle with the sesame seeds. Bake in a preheated oven at 350F for about an hour for a bundt form. Use a toothpick to check if it�s done with other cake forms as it may take less baking time.

That�s it. You have a wonderful cake that is light and delicious.

Susie�s note: If you are not fasting for the Lent season, I recommend substituting 1 cup of milk for the wine. I think it gives it much better texture. I also prefer to use the raisins for some added sweetness and zip.

St. Fanourios
Have you ever lost something important to you, so important that you prayed to find it? St. Fanourios (the one who reveals) will help you to find it. It's an old tradition to ask something from the Saint and when our prayers have answered, we make a special pie called "fanouropitta" (St. Fanourio's pie) and we brink it to church to say thank you to the Saint who helped us. This pie is made of odd number of ingredients (7, 9 or 11) and has to be cut to 40 pieces and given to people the same day we made it. All the paintings have the Saint with a lighten candle his hand.

Charles he is a saint titled "known only to God" - it is an awesome story to me. As out of the world knowing nothing about this man, came a saint so powerful that he is known for finding lost things - lost people.

Aren't we like him? We go about our daily lives, unknown to the world, only to those around us and to God! Doing what God ask of us. He is so true to complete the work he has begun. Now the torture he went through, humm...well we have a lot of torture in our lives, not that but, anyway...

CHINESE COLD CUCUMBER SALAD

3 cups peeled cucumbers, cut into chunks, about one and a half times the size of Peanut M&Ms

1 small red onion, finely chopped.

Dressing:
1/4 cup seasoned rice wine vinegar
1 tblsp. reduced sodium soy sauce
1 teaspoon sesame oil
1/8 teaspoon ground white pepper

Usually I'd first salt the cucumber chunks to draw out the water as much as possible - leaving it possibly for 20-30 minutes.

Then place cucumbers and onions in a large bowl, and toss to mix. Combine the dressing ingredients in a small bowl, and stir to mix. Pour the dressing over the vegetables, and stir to mix well.

If one wishes, a small amount of chopped chilli may be added to give a bit of kick.

This is a refreshing and cool salad, perfect for summer evenings, and often eaten as an appetiser.

My daughter loves avocados.
Leave off the chicken.

FLORIDA RICE AND AVOCADO SALAD

3 cups cooked rice, cooled
2 cups chopped cooked chicken
2 avocados, peeled and cut into 1/2-inch cubes
1 cup diagonally sliced celery
1/2 green bell pepper, cut into julienned strips
1/4 cup minced onion
3 tablespoons lemon juice
2 tablespoons vegetable oil
1 1/2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon ground white pepper
1 clove garlic, minced
Hot pepper sauce to taste
Salad greens (optional)
Tomato wedges or roses for garnish

Combine rice, chicken, avocados, celery, green pepper and onion in large bowl.

Place lemon juice, oil, salt, sugar, white pepper, garlic and pepper sauce in small jar with lid; shake well. Pour over rice mixture. Toss lightly. Cover and refrigerate 1 to 2 hours. Adjust seasonings, if necessary. Serve on salad greens. Garnish with tomato wedges.
