Ukha: Russian Fish Soup

Very easy and quick. You can make all kind of substitutions. This is the recipe we used at Jordanville on feastdays. (Quantity adjusted)

4 cups water
2 potatoes, cubed
1 onion, chopped
1 bunch fresh parsley, chopped
4 ounces cod fillets, cubed
1 lemon, juiced
salt and pepper to taste

Put water in a large saucepan and bring to a boil over high heat. Add the potatoes, onion and parsley. Heat for 10 to 15 minutes and add the fish. Heat for 10 more minutes, then squeeze in lemon juice and season with salt and pepper to taste.
I like to use whole salmon steaks, and cook for an additional 25 minutes.

Baba's Christmas Sour Mushroom Soup (Ushka)

This IS the one Baba made on Christmas. This is a standing Carpatho-Russian Christmas staple. This does not sit well, so I made the quantities small. So make it and eat it!

1 pound dried mushrooms
1/2 pound sauerkraut (with juice)
3 Tablespoons chopped onion (finely chopped)
4 Tablespoons butter
3-4 Tablespoons flour
4 cloves garlic

Soak mushrooms over night in water, drain in morning. Chop up the mushrooms and add to 2 quarts of water along with the garlic and cook for 1/2 hour. Add the sauerkraut and the sauerkraut juice to the mushrooms ( if you like your soup more sour, add more juice now, if you don't have extra, use a teaspoon of white vinegar) Cook for another 1/2 hour. Melt the butter and saute the onions until lightly brown, now make a rue frying the flour in the butter till the flour is browned lightly. Add the rue to the mushrooms and sauerkraut and cook for an additional 20 minutes. Serve with small square noodles called lechki. If you can't find lechki, look for eggnoodle flakes or even bowties. But every Baba I know makes her own lechki.

Dear Pavloosh,

Originally the title "Little Ears" was put off for me, but when I read the recipe, it definitely sounds intriguing. When I am able to eventually get back to the kitchen and start really cooking for myself, I want to try the recipe. If not this fast, the next one. Thank you for posting it.

Hello

I noticed "butter " as one of the ingredients.

I can remember that baba said. "We eat nothing that has a voice or anything that came from that which had a voice on Christmas Eve". Fish, naturally have no lungs and therefore no voice. So, they are acceptable.

We were reminded also of all of the meat by-products which would for us break the fast. So I wonder about the butter?

That last recipe is definately NOT posnaya. It was made Christmas day. The lenten version is a few posts behind. I too, remember the "no voice" stipulation, but that was for the duration of Post , not just Christmas Eve. The Nativity Fast is considered just as strict as Great Lent, thus ruling out all flesh, dairy, and oil, with the exceptions noted for the use of fish on Feast days.

I've found an affinity for chips, salsa, and guacamole. Boca and Morningstar are great friends of mine, too. And peanut butter... mmmmmmmm.

Try peanut butter and soy chocolate chips for a little sweet snack, too.

Why SOY Chocolate chips ?

If your choccie is of the very dark and over 75% Cocoa Butter there is no dairy in it - so of course Choccie is OK.

But then , of course , choccie chips are unknown over here

Easy Eggplant Casserole

1 cup spaghetti sauce (marinara)
3/4 cup shredded mozzarella cheese
3/4 cup cottage cheese
2 T grated parmesan cheese
3/4 lb eggplant sliced 1/2� thin

� Grill eggplant on a Foreman or other grill for 5 - 10 minutes (until soft)
� Spray 8X8 baking dish with non stick spray.
� Spread half eggplant slices over bottom.
� Spread half the sauce over the eggplant.
� Mix cheeses and spread over the sauce.
� Layer remaining eggplant slices and top with the rest of the sauce.

Bake at 350 degrees for 30 - 35 minutes.

It is yummy. Got it from a buddy on my other website...



But...it also works quite well with zuchinni instead of eggplant...maybe two big ones or three small ones would work.
