I'm interested in this topic, as well.
There are a few worthwhile books of the sort you mentioned: patristic commentaries on a given book. Johanna Manley has done great work on this front -- she has produced books excerpting patristic commentaries on the Psalms ("Grace for Grace"), Isaiah ("Isaiah Through the Ages"), and a third ("Wisdom, Let Us Attend") that covers Job and much of the rest of the OT.
St. John Chrysostom has a series of multi-book
series of commentaries on Genesis, the Psalms, and the Old Testament available from Holy Cross Bookstore. Naturally, St. Augustine's writings on the Psalms are inspirational. St. Gregory of Nyssa's work on the Psalms is available. Most of the Fathers wrote extensively on the Song of Solomon (Song of Songs, Canticle of Canticles).
