do Eastern Rite Catholic churches use liturgical diptychs? From my understanding they are used to commemorate the patriarchs, Bishops, and saints?

Yes, Eastern Catholic Churches use in our rites diptychs.

Sometimes. In traditional Melkite usage, the deacon or priest commemorates the bishop, the bishop commemorates the patriarch, and the Patriarch commemorates the Pope.

Some might find this disturbing but I commemorate the Patriarchs along with the Bishop of Rome. Oh My! whistle
