I'm kind of fed up with the lack of tradition in the Latin church of present and I was wondering where one might find the fasting guidelines for the Byzantine Catholic Churches. In Jesus and Mary David

If you search Byzcath you will find lots of threads about Fasting.
As a Latin you are bound by the traditions of your Church.
As a member of the UGCC I am bound by the traditions of the UGCC - and I am also under the direction of my SF - it is he who decides whether I should fast , and how strictly I should keep that fast.

The Eparchy of Parma issued these reminders to us prior to the start of Lent: 2009 Lenten Fasting Regulations
The Eparchy has issued these reminders for the fasting regulations
Abstinence
The law of abstinence forbids the use of meat or meat by-products, permitting the use of eggs and dairy products.
Abstinence is to be observed on all Wednesdays and Fridays during the Holy Season of the Great Fast and on Holy Saturday.
Strict Abstinence
The law of strict abstinence (fast) forbids the use of meat, eggs and dairy products or any of their by-products.
All of the adult faithful of the Eparchy who receive Holy Communion are obliged to observe Strict Abstinence. Those with valid medical reasons; pregnant or nursing mothers are not bound to fast. Strict Fast and Abstinence is to be observed on the First Day of the Great Fast, Monday, February 23rd and on Great and Holy Friday, April 10th.
Dispensation
Pastors and administrators may, for a just cause, grant to the individual faithful and to individual families, dispensations or commutations of Abstinence and Strict Abstinence into other pious practices.

Of course you can do more - but if you read past posts about fasting as well as the indications given to you above , you will also discover that we practice Fasting under the guidance and supervision of our Spiritual Father / Priest. What he says goes

In that case - do nothing about fasting till you have one .
IIRC you are young and you will have to be very careful about it so that you get enough nourishment . Do nothing more till you have good advice

yeah I know what you mean food is important. The only problem with finding a spritual father is that anybody I would trust enough is pretty liberal.

Food is not the problem - it's adequate nutrition .
Keep the RC Fasting prescriptions till you are older and living independantly , no longer having to fit into family mealtimes

Okay I will:) but I'm going to keep a longer Eucharistic fast(One hour is not engough time to prepare to recive our lord) . On the matter of a spiritual father is it better he be a priest?

In Jesus and Mary David Christ is risen! You seem to have figured out it is advisable to do such practices with the guidance of a spiritual father or other competent spiritual director. You might consider exploring the western tradition, which some of us still practice, of abstaining from meat on Wednesdays and Fridays, unless of course you're already a vegetarian and then you can abstain from something else. Did you know that our Holy Father's Message for Lent 2009 was on Fasting? http://tinyurl.com/apglk8 Many of us Latins do practice fasting and abstinence with joy. But certainly if you are a young person, as people have mentioned you are, then you especially want to be getting competent guidance.
