I know this is a bit of a broad question, but does anybody know of any good resources for learning more about Eastern Catholic theology? I'm quite interested in learning more about the Sui Iuris Churches and their expressions of faith.

It is a big question indeed. It depends a lot on how much you already know, but if you want an historical survey of the Christian East, here is a good start: The Eastern Christian Churches – A Brief Survey (7th edition). [cnewa.us]

If you want to go into more detail, especially theologically, I would highly recommend Eastern Christian Publications [ecpubs.com].
