It was a delight to read your post; delighted because you are so in love with Christ that you will attend the best of both Churches. Don't let anyone convince you that you are betraying either Church.
Regarding your funeral, hopefully many years away so that you can continue your good influence, talk to your current Byzantine pastor about it. If he determines you should change rites then let the Holy Spirit make your decision. If he sees no problem as things are, then write it in your funeral instructions and let your family know. The Church is obligated to bury the dead; I don't think a specific Catholic Church rite is mandatory in your circumstances.
