Yeah, this is slowing getting better, though. Lamoreaux's translation of most of Theodore Abu Qurrah's works, published by BYU Press, is very accessible and readable, as is Fr. Sidney Griffith's translation of Abu Qurrah's "Treatise on the Veneration of the Holy Icons". Griffith's The Church in the Shadow of the Mosque is still the best history of Christian life in the caliphate, despite it's brevity.
Later this year (I hope!) look out for a pretty extensive anthology of Arab Orthodox texts in English translation coming out from Northern Illinois University Press, entitled The Orthodox Church in the Arab World: An Anthology of Sources 700-1700...
