On the very practical level, no matter how careful we are there's always a possibility that our food could be tainted, or otherwise harmful to our health.
On the spiritual level, we simply remind ourselves and acknowledge that every good thing we have is from Him.
Oh, yes--and since eating and drinking is usually a social event, which is always an opportunity either to grow closer to God or be distracted from Him, the blessing serves as an act of faith, to designate the meal as an act of Christian fellowship, binding us together as brethren in Christ.
