Byzjohn,
Well I am unaware of Muslims wearing skullcaps, but monks of the Syriac tradition wear the eschimo which is actually the hood of their monastic habit, not a skullcap in the Latin sense at all. Over top of this a black silk turban is usually worn, the Maronite Patriarch wears a red one.

The Coptic and Malankara Catholic monks also wear similar headgear. All are very similar to the eschimo. I believe any monastics of the Syriac tradition (Syriac Antiochian, Malabar, Malankar, Maronite, Chaldean) traditionally can wear one after profession.
I have an photo of an Ethiopian priest wearing one, but I do not know if this is customary headgear for the Ethiopians, usually it is a white turban-like cover.
