Right now I'm using an Olympus DS-2 digital recorder, then I pull the audio into my PC, and use Audacity to splice it together. I have some audio gear coming (mic, mixer, cables, etc), so that should improve the audio a good bit more.

I have the DS-2 too. I've recorded Bishop John, Hegumen Nicholas and lots of plainchant and am quite pleased with the results.
I'm interested in what additional equipment you're getting?

I ordered a Behringer UB802 mixer along with a Nady condenser microphone, mini-microphone stand, and some cables. From what I read, a normal microphone rather than the mini microphone in the DS-2 will work much better, and give a good sound. Then you need the mixer to balance the sound (or multiple mikes), and that should help cut out some of the 'hisses' you hear often on 'F', 'S', 'H' sounds, plus give it a warmer, more normal sound.
I'm hoping to be able to capture our liturgy this Sunday, and use some of that in the podcast if the sound comes out ok. I hope to get the gear in tomorrow, so I am waiting to record next week's readings until I get that in.
